What is Polenta? Polenta (pronounced poh-LEHN-tah) is a cornmeal porridge that originated in Northern Italy as sustenance for the peasantry. Although it may not be very well-liked in the country, many Italian Americans value it as a part of their heritage. While predominantly prepared with coarse yellow cornmeal, polenta may also be produced with finely ground yellow or white cornmeal. Conventional recipes need prolonged cooking in water or broth, however, a significant portion of the cooking duration may be unattended. Contemporary shortcuts include the use of instant or precooked polenta. Polenta is often presented as a soft, dense porridge, which may be garnished with sauce, a robust ragout, or cheese.
