To obtain the best quality Lemon Essential Oil, near-ripe (green) lemons are picked from the tree and stored, maintaining a pH value of 2.2 until they become yellow. This process increases the concentration of oil in the peel glands. The fruits are then peeled and sent for cold-pressing, which yields a thin yellowish-green liquid, later filtered for purity and clarity.
