Our newest microlot from Colombia is a rare Gesha variety that was fermented with fresh lemon and lime juice , creating one of the most unique and refreshing coffees we’ve ever tasted. Why This Coffee Is Special This coffee comes from Finca Los Sauces , a small family farm in southern Huila, Colombia, run by two young cousins who are already becoming leaders in experimental coffee processing. After carefully harvesting the coffee cherries, they added freshly squeezed lemon and lime juice during fermentation , allowing the flavors to naturally infuse into the coffee over 270 hours of fermentation before slowly drying it for nearly a month.
