Gum Arabic (sometimes known as Acacia Gum) is a natural gum powder made from the sap of the Acacia tree. It is a natural food stabilizer and is used in the making of many soft drinks, candies, ice creams and marshmallows. It is also gaining usage as an important ingredient in the type of cooking known as “molecular gastronomy.”
