Before her diagnosis, ramen was one of her favorite occasional after-school meals. As a mom with Celiac disease myself, I knew how painful it could be to lose foods you once loved, and I was determined to create something that helped her feel normal again. After trying gluten-free ramen options that either didn’t taste the way we hoped or included ingredients we didn’t love, I started making my own chicken ramen seasoning at home. We kept it in a mason jar in the spice cabinet, and Kolbie loved it. Over time, more and more people asked if they could buy a bottle, and that little homemade blend became the product that started Clean Monday Meals.
